			<content:encoded><![CDATA[<p>Coffee is the most popular drink in the world after water. Yet despite the rise of global coffee chains, countries maintain distinct ideas about what makes a good coffee.</p>
<p>A Turkish proverb says that coffee should be ‘as black as hell, as strong as death and as sweet as love.’ While global coffee chains such as Starbucks have played a major role in introducing concepts such as the frappuccino, tall skinny latte and soyaccino into the lives of millions, many countries still maintain strong ideas about what makes a good coffee and how it should be consumed.<br />
<span id="more-30"></span><br />
Coffee in Turkey, for example, still adheres to the adage above: the beans are ground very fine, added to water and brought to the boil three times in a long-handled brass pot called an ibrik. Sugar and sometimes also cardamom are then added. As this thick, sweet mass is drunk, the grounds sink to the bottom of the cup, and some people believe it is possible to read the future in the patterns the grounds form.</p>
<p>In Italy, coffee is usually consumed standing up; and while a short, dark espresso can be consumed at any time of day, a cappuccino after midday is ‘not done’. This is because it is a milky drink, and therefore considered too heavy on the stomach to be consumed after meals. The Dutch, on the other hand, see nothing wrong with drinking both cappuccinos and lattes after meals and in the evening. The French usually start their days with big bowls of steaming café au lait; while the Germans are partial to a cup of coffee during social get-togethers that have become known as kaffeeklatschen after the beverage that accompanies them.</p>
<p>From Bean to Cup<br />
Today, 400 billion cups of coffee are consumed annually, according to coffee cooperative Boresha International, and the drink has overtaken tea in popularity for the first time. This popularity has been slow in coming, however.</p>
<p>Legend has it that coffee was first discovered more than a thousand years ago by an Ethiopian goat herder named Kaldi. He noticed that his goats became unusually frisky after eating the berries from a particular bush. Out of curiosity, Kaldi tried the berries himself and found that he too had renewed energy. Word of coffee and its amazing powers traveled to the Arabian Peninsular and then to Turkey where the bean was roasted for the first time over open fires. It was eventually brought to Europe by Venetian traders. The first coffee house was opened in Venice around 1650, and the concept quickly spread throughout the continent.</p>
<p>Coffee Competition Raises Standards<br />
With more people drinking coffee than ever before, consumer expectations have increased. The World Barista Championship (WBC) is just one way the industry is working to improve standards, from the use and combination of specialty beans through to the presentation of the drink itself.</p>
<p>“It’s a very difficult competition to win,” says James Hoffman, the United Kingdom’s top barista (professional espresso maker) and WBC 2007’s Grand Finalist. “Often those who do take top honors have put many months, if not years, into their performance, coffee and preparation. My goal for the competition was make it into the top six as no one from the UK had ever made it into the Grand Final before.” The UK has long been a country of tea drinkers, making Hoffman’s win even more noteworthy.</p>
<p>It is clear that coffee is here to stay, and has become an almost indispensable part of today’s busy lifestyle. It is also clear that it will take more than strong branding and marketing for global coffee chains to override local coffee-drinking customs completely.</p>

			<content:encoded><![CDATA[<p>There are lots of myths and legends when it comes to the history of coffee. Many thought the cup of coffee to be very mysterious and this stimulating coffee found itself shrouded in mystery in the earlier days. One of the most popular legends is associated with a goatherd named Kaldi. One day, when Kaldi was with his herd of goats he noticed a sudden change in their behavior. The goats turned spirited and that was made Kaldi hunt for the probable reason. That was the time he viewed a wild coffee shrub and it dawned on him that his goats probably had eaten some cherries off this shrub. Curious, it led him to have a taste of the wild cherries himself. Upon feeling energized, he spread the story of these wild cherries in his village. From the local monastery, the tale spread between the monks and even the locals.<br />

The monks found it very useful as it helped them to stay awake for their ceremonies that went through the night. The Arabs were considered to be the first to cultivate coffee. They even began the trade. The first coffee plants are said to have come from the shores of the Red Sea. Coffee beans were actually considered to be a food in the olden days. The cherries were minced together and then mixed into the rest of the food. It was only in the 11th century that coffee first saw itself being developed into a hot drink.</p>
<p>The Venetian merchants imported coffee to Europe and by the 17th century, coffee had made its way not only to Europe, but was gaining popularity across the continent. Initially condemned due to religious reasons, one saw major controversies erupt around this dark beverage. Despite the facts that surrounded it, the mid 17th century saw a number of coffee houses cropping up all over the town. A lot of people gathered here to discuss business and to gossip in general.</p>
<p>The Arabs though were very possessive about the growing popularity of coffee and its spread around the world. The beans were dispatched from the Yemen province of Arabia and were kept a highly guarded secret. It was later thought, that it was either the Dutch or a group of Pilgrims who finally tried to smuggle the plants to India. After a few attempts, coffee finally took root in India. The cultivation then expanded to the islands of Java and Sumatra.</p>
<p>The Dutch brought coffee to France in 1715. Louis XIV of France was presented with a coffee plant and it was then planted in the Royal Botanical Garden. Also known as the Noble Tree, it had the French really hooked on to coffee and the crops really flourished with the plantation of the Noble Tree.</p>
<p>This tree saw itself have roots in various other parts of the world. Francisco de Mello Palheta is known to have brought the coffee into Brazil. He was sent to obtain coffee beans from the French Guinea. The French were known to guard this fiercely and Francisco de Mello Palheta would have actually been unsuccessful, had he not to have a very appealing personality. This resulted in the Governor’s wife presenting him with a huge bouquet of flowers. It was only much later; he made the discovery of the coffee seeds buried deep inside it!</p>
<p>The history of coffee has seen so many travelers, pilgrims and traders go on long voyages carrying these precious coffee seeds all over the world. New plantations meant more business and slowly, coffee plantations and its export, turned into a very profitable industry from the olden days till date.</p>
<p>Many innovations that go into the making of this beverage have seen the coffee really metamorphose over time. So the next time you sip your perfectly blended cup of coffee in a very swanky coffee shop, I hope this captivating history of coffee would linger on in your minds, for a long time to come. </p>

			<content:encoded><![CDATA[<p>Arabian coffee is the quintessential coffee of the world. Arabia lends its name to the highest quality coffee plant in the world, Coffea Arabica. Arabian coffee accounts for about 80% of all coffee produced in the world. It prefers higher elevations and drier climates than its cousin C. robusta.</p>
<p>The tropics of South America provide ideal conditions for growing Arabian coffee which grows best between 3,000 and 6,500 feet but has been grown as high as 9,000 feet. Generally, the higher the plant is grown the slower it matures. This gives it time to develop the internal elements and oils that give coffee its aromatic flavor.<br />

Coffee was originally discovered in Ethiopia, just across the Red Sea from Arabia. Coffee soon made its way to Yemen where it was embraced by the Islamic people. Soon it became a beverage endorsed by the Islamic clerics as drinking alcohol was prohibited in their religion. Arabian coffee soon came to be known as an Islamic beverage.</p>
<p>Arabian coffee was exported to Europe where the people embraced it. However, the Catholic Cardinals shunned it as the &#8216;Devil&#8217;s drink&#8217; and tried to have it banned.</p>
<p>But then Pope Clement VIII decided that it would be imprudent to ban the beverage without having tasted it, so he summoned a sample. As legend has it, the Pope was immediately enamored by the distinct, pungent aroma and taste. He decided that to banish the delightful drink would be a greater sin. So he baptized it on the spot claiming that it would be a shame to let the impious ones have this delightful drink all to themselves.</p>
<p>Arabian coffee is still a part of the Islamic faith and is use in ritualistic ceremonies.<br />
Arabian coffee growers protected their monopoly on the prized plant. They were the exclusive providers of coffee throughout the world for several hundred years.<br />
That is until a coffee plant finally made its way to the Caribbean. This began a new legacy of high-quality coffee in Latin America.</p>
<p>It is said that all the Arabica coffee grown in the world started from this plant as cuttings were transplanted all over the world. Arabian coffee is truly the source of coffee throughout the world.</p>
<p>The word mocha comes from the name Mokha, the shipping port in Yemen where all Arabian coffee was exported. Mocha has become a term used for describing a coffee beverage in which chocolate is added. But originally it had nothing to do with chocolate.</p>
